How can you get a sponge cake to have an even thickness all around after baking?
This trick is more important for saving money, than for aesthetic purposes. When the sponge cake bakes, it rises in the middle, giving you a dome shape. Just before masking the cake, you need to trim off the top to make it even. If you have a large dome, you end up wasting more sponge cake. Well, less trimming is equal to money saved, although the leftovers can be used to make other pastry items.
