Question. What is strawberry shortcake?
Answer. Strawberry shortcake is a light dessert that refers to a sponge cake that is layered with strawberries and Chantilly cream, giving you a very light-tasting cake. As a cake you may use vanilla sponge cake or a Genoise recipe. As a filling you may use a number of popular creams such as Pastry cream, or simply a very light cream.

NOTES: You can use all vanilla powder or all vanilla extract, but we prefer to use some vanilla powder and skim milk powder in order to stiffen the whipping cream. We find perfect sweetness of the whipping cream when 20% of sugar is used (20% of the weight of the whipping cream), but you may adjust the amount to your taste.
