How to cut even cake layers

Cutting even cake layers is not as easy as it looks. It takes some practice to perfect this technique. 

TIP: It is best to cut the cake when it’s semi-frozen (about 5 minutes at room temperature). 

Tools required for cutting cake layers;

  • Revolving cake stand (optional)
  • Long serrated knife (see our pastry kit)
  • Knife leveler tool (optional) -see below

Procedure for cutting even cake layers

Cutting perfect cake layers

  • First remove the dome or top crust of the cake by tracing a line (about 1-inch deep) all around the top edge of the cake. 
  • Once you trace a line all around, use this line as your guideline. Slowly rotate the cake while at the same time start cutting deeper into the cake using a long serrated knife. 
  • Once the top crust is removed, do the same for the bottom crust, but cut only a very thin layer of crust.
  • The remaining cake will be cut into 3 or 4 layers. Pastry shops usually cut the cake in 4 layers.

In the video demonstration we are using a 'guide' (sold through our site), to ensure that all cake layers are cut evenly. If you are a beginner this 'guide' will be of great use to you. 

TIP: When purchasing this 'guide' it is recommended to use a pair of 'guides' per knife, which renders the knife useless, because now the knife is too short. If you used a pair of these tools, you would need to purchase an even longer serrated knife, costing you for sure, a few hundred dollars more. Well, we got around this problem as shown in the video.

This tool works perfectly if your serrated knife is about 43.5cm long (handle: 14.5cm long), and the cake diameter is 8-inch or even 10-inch. The exact knife that we use has a perfect handle thickness suitable for cutting 1 cm thick cake layers, which allows you to use only one knife leveler or guide.
