How to create most of the colors using fondant

Question. What is fondant?
Answer. White fondant is an icing that can be rolled out thin (using a rolling pin) and it is used to cover a cake to give a more professional look and finish to the final product (eg; wedding cake, birthday cake, etc).

In this lesson you will be introduced to the following terminologies;

Rolled fondant

White fondant is also called rolled fondant white icing, etc. Some of the ingredients that may be used to make rolled fondant are; icing sugar, water, gelatin, vinegar, glucose, and glycerin.

 All you need to have to create almost any fondant color that you wish

 

To create most of the colors found on a color wheel and more, you will need to have the following items in stock;

  • White fondant
  • Black fondant
  • Red fondant
  • Brown or chocolate fondant.
  • Yellow gel color OR yellow fondant
  • Blue gel color OR blue fondant

Primary colors creation

The 3 primary colors of the color wheel are Yellow, Red and Blue.

The first thing you must do is to create one of the primary colors of the color wheel using the yellow coloring gel. Use white fondant and yellow gel color to create the yellow color. The other two primary colors of the color wheel are Red and Blue.

Red we already have from purchasing ready-made red fondant. The reason we chose to purchase the already-made red fondant is because it is very difficult to derive the red colored fondant using white fondant and red gel coloring. An excessive amount of red gel coloring is required to derive red fondant, and if too much gel color is used the texture of the white fondant will change, making it too sticky to work with. In order to avoid all these problems, it would be best to purchase ready-made red fondant.

To create the last primary color, blue, do the same as the yellow color. Mix some blue gel color to the white fondant to create the blue primary color.

 Secondary colors creation

The secondary colors of the color wheel are; Orange, Violet and Green. To derive these colors simply used equal parts of primary colors. For example to create Orange, mix in equal parts (by weight) of Yellow and Red fondant. To create the Violet color, mix in equal parts (by weight) of Blue and Red fondant. To create the Green color, mix in equal parts (by weight) of Yellow and Blue fondant.

Once you have created your primary and secondary colors, use any combination + a bit of white OR a bit of black to derive a lighter or darker color tone. See examples below for further understanding.

Fondant color derivations using percentages

If you prefer you can use percentages instead of actual weight values in order to derive any desired size of colored fondant. For example, take a look at the first example. Give the largest amount in the recipe, in our case, the 10g of white fondant a value of 100%. The equivalent percent value of the red fondant used in the recipe can be derived by dividing the 2 by 10 which equals to .2 or 20%. So, choose a desired weight of white fondant, say 75g and add 20% (of the weight of the white fondant) of red fondant (75g x 20% = 15g) to achieve the same color but in larger quantity.
