Icing recipes

 Royal icing


  • 1 pound confectioner's sugar, shifted
  • 3 egg whites
  • 1/2 tsp of cream of tartar
  • Flavoring; 1 tsp lemon juice (optional)


Beat ingredients until mixture is firm.

To prevent a crust from forming over icing, spread a moist cloth over the bowl.

Buttercream icing


  • 1/2 pound sweet butter
  • 2 cups confectioner's sugar
  • 1 egg white


Beat all ingredients thoroughly.

Butter icing


  •  1/4 cup butter
  • 2 cups confectioner's sugar
  • 1-2 tbsp milk, as needed
  • Flavoring; 1/4 tsp vanilla


Beat the butter until creamy and very soft. Gradually add the confectioner's sugar. Add enough milk (drop by drop) until mixture gets too stiff.

Other flavorings;

  • 1/2 oz melted chocolate (to make chocolate butter icing).
  • For Mocha icing use coffee instead of milk.
