Question. What is a gluten-free diet?
Answer. A gluten-free diet is a diet where the grains (wheat, barley, rye, and all derivatives thereof; spelt, malt, semolina, etc) that contain a protein called gluten are avoided.
So what can we do in terms of pastries that are gluten-free. Let's think in terms of the ingredients that we cannot use to put things in perspective. This is like starting from scratch, as you will see. Here's a list of products (pastry and non-pastry products) you CANNOT CONSUME in order to go gluten free;
- whole-grain and products
- baked goods
- breakfast cereals
Here's a list of products you cannot use when making pastries;
- Practically any flour coming from wheat; white all purpose, whole wheat, rye flour, etc
According to research done by doctors on decades of clinical studies, most major diseases including, dementia, epilepsy, headaches, depression, type 2 diabetes, schizophrenia, heart disease, cancer, thyroid problems, Alzheimer's disease, autism, anxiety, Parkinson's, Celiac disease, and others are somehow related to gluten and processed foods. We are not here to prove that this theory is right or wrong, but simply to make you aware of these facts.
Most if not all people will start to feel better within a couple of weeks of following a gluten-free diet. So, let's assume that the doctors are right. Let's get back to pastries. What kind of pastries can we make that are gluten-free. How can we make bread without flour? This question gives you a taste of the level of difficulty in recreating all recipes. It's like starting from scratch, not just in pastries but in breads, muffins, pancakes, or whatever other pastries you can think of.
Here's where we begin our research to derive gluten-free pastry recipes that are not only gluten-free but also ,we wish to take them a step further, and make them sugar-free. Having removed the sugar and the flours (and gluten), what do we have left? Eggs and butter.
